Serves 4
INGREDIENTS:
4 tbsp. dried mint
1 tbsp. red wine vinegar
1 1/2 tbsp. sunflower oil
1 tsp. salt
1 tsp. black pepper
1 large English cucumber, thinly sliced
6 red lettuce, shredded
METHOD:
Combine dried mint, red wine vinegar, sunflower oil, salt and black pepper in a bowl. Cover and chill for 1/2 hour to allow ingredients to blend flavors.
Meanwhile arrange red lettuce shreds on the bottom of a salad bowl. Remove dressing from fridge.
In another bowl, combine cucumber slices and dressing. Coat well and spoon minted cucumber slices on top of the red lettuce. Serve chilled as a side salad to chicken, fish, curry or barbecued meat.
